Lilac, Chef John Fraser's most elevated concept at The Tampa EDITION, showcases unique flavors and techniques through an Eastern Mediterranean lens. Guests are welcomed with hors d’oeuvres to share, followed by a three-course prix fixe menu. Signature dishes include locally sourced Grouper cooked in a cataplana, Short Rib cooked on a rotisserie, and Herbed Pasta with a soft egg and sherry-braised chanterelle mushrooms. Taking its cues from Fraser’s Greek heritage and his admiration of Turkish cuisine, Lilac’s balanced menu celebrates his vegetable-forward philosophy using fresh, seasonal, and locally sourced ingredients.
Beverage Director and Advanced Sommelier Amy Racine introduced a Champagne cocktail cart in Lilac offering a selection of unique cocktails prepared tableside. In addition, she has curated a wine and Champagne list, which ranges from hard-to-find sparkling Rhône to Dom Perignon. The cocktail menu offers a twist on the classics, such as the ‘Lilac Vesper’ and ‘Halva Espresso Martini’ or ‘Tarragon Boulevardie’ with apricot, spotlighting ingredients from the Mediterranean.
